"Cheezy" Roasted Chickpeas (Vegan)February 25, 2009 @ 1:07am
This recipe has become a favorite at my house, especially for my daughter's school lunch.

1 15 oz can chickpeas (or about 2 cups cooked garbanzos--same as chickpeas)

1 Tbsp Canola oil

1 1/2 tsp brewers yeast (same as nutritional yeast) can use flakes or powder we used the powder

1/2 tsp salt

Mix all ingredients together in bowl

spread a single layer on baking sheet or pyrex at 400 degrees

Roast for 30 minutes, stirring occasionally, until golden brown and slightly crispy.

Can be eaten as a snack by itself or in a pita.

To eat in a pita, mix chilled chickpeas with mayo or vegannaise and toasted sesame oil. put in pita with a mix of whatever sounds good....lettuce, tomato, onion, sprouts, cucumber you name it. My daughter has found that just simple lettuce and tomato makes a great school lunch.
